

I consider myself a pretty adventurous eater, especially when it comes to seafood- sea urchin, raw oysters, raw clams, natto, sea cucumber, sea snails, crab brains. Mmmmmm mmm! You name it, most likely I’ve eaten it. 🦀🦐🦑

Until Chef Jin introduced me to hoya AKA sea squirt AKA sea pineapple. Such an odd looking and curious creature indeed! And I have to be honest- the first time I had it I kinda didn’t like it. But once my mind was able to make sense of the new, unfamiliar flavors, my belly craved more. 😛

And so the next time around I gave another go at it. And something interesting happened. It was like my belly shook hands with my brain 🤝 and came to some sort of agreement. And then BAM! The alchemical shift happened.

Served with a sprig of watercress , a pinch of lemon 🍋 and a cold glass of pure sake , this fresh sessile marine invertebrate is now one of my all-time favorites!
