PALEO CHARMS. When I was a kid, I loooooved cereal. And whole milk. I would eat boxes of cereal in one sitting. One of my favorites was Lucky Charms. So when I found out I had Hashimoto’s in my twenties, one the biggest things I mourned was no more cereal and milk. After years of doing a strict elimination and paleo diet, I invented a way to have gluten-free, grain-free, dairy-free cereal again: Paleo Charms. Recipe experiment below:
“oats”
•two c almond flour
•two tbsp coconut flour
•half tsp baking soda
•quarter tsp celtic sea salt
•one c coconut milk
•three tbsp coconut sap
•one tsp vanilla
“charms”
•two egg whites
•half tsp vanilla
•half c honey/maple syrup
For cereal: Mix all the “oat” ingredients in a bowl and spread thinly and evenly on a cookie sheet. Dehydrate/bake in the oven at 325° until crispy. Remove and cool. Break into small oat bits.
For marshmallows: Beat egg whites til they form soft peaks. Slowly add vanilla and honey/maple syrup. Do not over whisk. Fill pastry bag with fluffiness and pipe onto parchment-lined sheets. Bake at 200° for 2 hours. Remove and cool. Break marshmallow meringues into small charm bits.
