I’ve been eating terribly lately (for me that means too many carbs and not enough fat and protein and veggies.) That also means my energy is crashing a lot and I’m starting to feel uninspired again. Because I know how directly related the food I eat is to how my mind and body feel, I can easily turn that train around. I pulled out some of my favorite paleo cookbooks for inspiration and invented a new salad and dressing. So tonight I’m back to veggies and Persian kabobs.
Chopped fennel (stalk and bulb)
1/2 cup fresh squeezed mandarin oranges
1/3 cup of fresh squeezed lemon
1/2 cupish of olive oil
1/8 cup of sesame oil (omit for AIP)
1.5 in of fresh shallot
1 in of fresh ginger
Dash of dried mustard powder (omit for AIP)
1 tbsp of raw honey
[Combine all ingredients of dressing in a Bullet or and mix on high.]
