

DOSA WAFFLES
Dosas are savory, crispy, thin crepe-like pancakes made from fermented rice and lentils in India. The rice and lentils give it a light, fluffy texture and the fermentation adds a hint of sour cheesiness.

Over many brunches, my brilliant friends and I have discovered you can pour dosa batter into a waffle maker and have it ready in minutes!

My favorite way to eat it is with expired coconut yogurt from @livingculturessuperfoods (The longer I let it sit past it’s expiration date, the more it tastes/feels like cream cheese to me!) Drizzled with local raw honey or jam and a cup of black breakfast tea on the side.

If anyone’s ever had a traditional Persian breakfast, this is the closest I get to a gluten-free, dairy-free noon-o-paneer these days and it definitely does the trick!!!
